Ha! Got it. Lesson 7 held the key I needed. Item/Display/Shading: GLSL *AND* Check the box for "Textured Solid".

Hi Paulo.
Thanks for these tutorials. They're extremely useful for a Blender beginner, like me.
I just thought I'd mention that I just chanced upon something useful (by pressing everything!). For those people using Blender with a tablet, or without a middle mouse button, the thing where you change a vertical window split to a horizontal one and vice versa can also be achieved by pressing the tab key.

| | | | I am very familiar with the resource mentioned by Jose. I think that it is excellent and I have viewed most of the tutorials; however, I believe that there are some significant differences between it and these lessons.
Paolo's Blender Survival Guide is focused on compositors who wish to use 3D in their compositions; tools are discussed only as necessary to achieve the learning objective of each lesson. The Blender Design Course really teaches you about the tools but not how to incorporate them into a compositor's pipeline.
So, I would hope that Paolo would continue with his current educational objectives and refer students to that resource should they wish to dive deeper into one of the tools or objects.
